It’s squash season!

At Maya’s Farm, we are harvesting some delicious delicata and butternut squash along with our seasonal crops!

Fall is the soup season and you should definitely try our delicious easy-to-make butternut, turnip and radish tops soup!

Ingredients:
1 butternut squash, peeled and chopped
3 medium turnips, peeled and chopped
radis tops
3 tbsp olive oil
2 cups water
1/2 tsp sea salt
1 tsp pepper
some rosemary leaves

Directions:
Heat the olive oil in a large pot over medium heat.
Add chopped butternut squash, turnips, radish tops, salt and pepper and continue to cook on medium for 10 minutes. Reduce heat to medium-low and continue to cook until all ingredients are softened (about 45 minutes).

Once the ingredients are softened add the water and continue to cook for another 10 minutes on medium heat until soup is warm.
Remove pot from heat and blend the hot soup with an immersion blender or a food processor.

To garnish your bowls of soup, fry some rosemary leaves: In a small skillet, add some olive oil and turn the heat on to medium. Add the rosemary and cook until crisp, about 30 seconds. Lift the leaves out with tongs onto a paper towel-lined plate and sprinkle over your soup at your convenience.
