Happy Lunar New Year!
One member of the Farm Family celebrates this holiday with a traditional hot pot soup. This year they chose Maya’s Farm as their local farmer of choice for all their veggies. Here’s the recipe to try yourself.
Ingredients:
1 Whole Chicken
1 bunch rainbow carrots
1 bunch nante carrots
2 bunch sugar baby carrots
2 bunch mini daikon radishes
1 inch fresh turmeric
1 inch fresh ginger
1 bulb garlic
1 bunch i’itois onions
1 bunch spring garlic
1 bunch cilantro
salt to taste
Directions:
Wash and slice the veggies add the water. Clean the chicken, stuff with onions and rub with salt. Pinch the bottom with a toothpick. Submerge the chicken in room temperature water with the veggies. Bring the water to a boil. Clean the foam at the top and discard. Allow water to simmer covered for 45 min. After 45 min, let stand for 5 min in the hot water, then remove the chicken. Let the chicken stand until the skin has cooled then chop. Continue to boil the soup and add salt to taste. Remove the veggies and serve on the side the chicken!
Hot pot is symbolic for the unity of family as all the ingredients are added to the pot and make the soup whole and delicious, just like all the people in a family. Enjoy this soup in any variation you like and the soup with your loved ones.

Seasonal Salad with Edible Flowers
Ingredients:
Any variety of fresh winter and heirloom greens
Edible flowers
Directions:
Rinse the greens and toss in a bowl. Top with edible flowers and your favorite dressing. We enjoyed fresh citrus squeezed with olive oil on top! Serve with a meal or as a light salad dish.
